Melt in your mouth Lamb
No knife required
Preheat the oven to 150°c
Lamb Shoulder 3kg (takes about 6 hours min) (2kg about 5)*
Chop up 4 cloves of garlic
Mix with Confiture de Citron about a good two dessert spoons
Also add some cracked pepper and salt about a teaspoon and a half
Stab the roast allover then with your nicely washed hands massage the mix allover the lamb.
Now there are two ways to slow cook it.
With a bigger shoulder like this I put a rack in a pan
and add water about 1/2 inch.
Into the water put a lemon cut in half.
and some lemon thyme if you have it (this is optional)
Then this is the really serious part. You MUST make sure the meat is really well sealed in. This is an integral part how you get the delicious gelatinous fall off the bone meat.
To achieve this Aluminium Foil and patience is your friend. I know you use a lot but it is worth it.
Wrap the entire baking dish in foil leaving it a little off the meat.
Once you are happy that the lamb is sealed then put it in the 150°c oven and leave it. No matter how tempted you are do not open the foil. I went and had a manicure and pedicure then a bath washed my hair etc and generally a lovely afternoon.

*Timing will vary for everybody according to how their oven cooks. as long as the lamb is moist it is fine. You want it so you can pull the bone out. This is gelatinous delicious slow cooked lamb not lamb to be served medium rare. So don't obsess about the details low and slow.

How to make a chicken into a bloody good chook.
Preheat oven to 160°c
1 Chook
Mix thoroughly
1/2 ts Lemon thyme fresh if possible or used fresh alternative herb
coriander is fine
Juice of half a lemon
1 dessert spoon Confiture de Citron#
Cracked black pepper & salt
120g butter
When mixed stuff the butter mixture under the skin of the chicken
Put the chook and some whole bulbs of garlic and potato and kumara in the pan with the chook and into the oven for about 1-1.5 hours *
Salad
Into a separate bowl
Chop into similar size pieces
1 red papaya,
1-2 mango,
1 red onion ,
1 red capsicum
1 bunch chopped coriander
Mix together and add juice of 2-3 limes **
